Seamless Sharpening
Seamless Sharpening can be used with knives that have a flexible blade, such as the Universal Edge (a single-bevel chef's knife).
Place the edge diagonally across the whetstone, raise the blade to approximately 18 degrees, and sharpen it as shown in the video.
Note: If the knife regains its sharpness after sharpening, you have maintained the correct angle. If the edge performance has not improved, try raising the spine slightly higher and sharpen again.
After sharpening, lightly remove the burr from the left side of the blade to finish.
For typical household use, we recommend sharpening for about one minute once a week.
(The actual sharpening frequency will vary depending on how often the knife is used.)
Seamless Sharpening Method
Seamless Sharpening™ is a new sharpening method designed to take full advantage of the properties of stainless steel knives.
It is suitable for most household kitchen knives with a spine thickness of 1.8 mm or less and a blade length of approximately 180 mm, restoring sharpness quickly and effectively.
1. Prepare the Whetstone
Use a #6000 grit whetstone that is at least 20 cm (8 inches) long. Wet the surface of the stone with water and place it on a firmly wrung damp towel to prevent slipping.
2. Sharpen the Edge
Place the knife diagonally across the whetstone. Raise the blade to an angle of approximately 18 degrees and make several dozen sharpening strokes while keeping light pressure on the tip of the blade.
3. Remove the Burr
For a single-bevel knife, sharpen only the beveled side.
When sharpening is complete, remove the burr to finish.
Important: Do not lay the back side completely flat on the stone. Instead, lift the spine a few millimeters and lightly touch only the edge to the stone to remove the burr. The blade face itself should not contact the whetstone.
4. Check the Sharpness
Test the edge on a tomato or a sheet of paper. If the knife cuts cleanly, the sharpening process is complete.
If the sharpness has not fully returned, raise the blade angle slightly and repeat the process.
As you gain experience, you will naturally find your own ideal sharpening angle, allowing you to sharpen more quickly and efficiently.

1. Set the Angle Gauge
Place the angle gauge on the blade with the taller side facing the cutting edge. Position the bubble level so that it is perpendicular to the knife edge.
2. Attach the Angle Holder
Tilt the knife until the bubble is centered in the level. While maintaining this angle, attach the angle holder in a position that allows the angle to be reproduced consistently.
Note: The recommended position is approximately as shown in the photo. However, because the thickness of angle holders may vary slightly, the holder may need to be attached closer to the center of the blade in some cases.
Tip: If you mark both the knife and the angle holder, you will not need to use the angle gauge again when sharpening in the future.
3. Perform Seamless Sharpening™
Using the diagonal length of the whetstone, sharpen the knife with the Seamless Sharpening™ method.
